our farm

​

Our urban farm is less than 4 miles away, and is a no till, fully organic garden, which grows fruit, berries, and  herbs for our menu. The farm's produce is harvested and preserved to be used in cocktails during the warmer season.  Our team takes produce to create shrubs, cordials, syrups, and infusions. We hope to add further infrastructure to the farm and behind the bar that will allow us to use produce from the farm year-round. Watch for our summer Garden to Glass cocktail program in 2026.

Weekly TIki​

​

It's back! Our weekly tiki program is now gracing the halls of Room for Milly once again. Stop in once a week for a rotating tiki cocktail for a good cause. A dollar from every tiki drink ordered will be donated to Denver Urban Gardens (DUG) , a non profit with the mission of creating healthy and hyperlocal food systems, stewarding a climate resilient city, and building strong interdependent communities.

We strive to craft a cocktail program with conscious initiatives that benefit the guest, but more importantly our community. Mainspring, our parent company's, equity data is a compilation of who we are, what we provide, and gives us insight on what we want to achieve. This report includes all staff at Mainspring.
